Terrifically Tasty Thursday – Roasted Fingerling Potatoes!

This is a staple side dish in my house…so yummy and simple!

Ingredients

12-15 fingerling potatoes

Olive oil – about 2 tbsps.

Minced garlic – 2 tbsps.

Minced dried onion – 1.5 tbsp.

Kosher salt – dash

Fresh black pepper – dash

Parsley – 1 tbsp.

Directions

Wash potatoes and remove any “wonky” parts with a potato peeler.  Hey, I’m not a professional chef but we all know that potatoes have wonky parts sometimes and I don’t care to eat those.  Cut fingerlings in half lengthwise.  Dump them in a bowl and toss with all seasonings.  Lay them flat on a cookie sheet covered in aluminum foil and roast at 425 degrees for 40-45 minutes.

Yum!
